Salting early pays off

This way, when the steak is grilling, the sugar and proteins blend with the salt and other seasoning, bringing in the flavor.

It is not advisable to grill steak that is too chilled, because it will take long for the inside to cook, the surface graying and drying. A god idea would be to let them hang around at room temperature for at least half an hour before grilling.

Thicker steaks should slide over
Thicker steaks should be slid over, or else they might burn on the surface, while the inside isn’t yet done. Most steaks will perfectly grill over direct heat alone if they aren’t thick. You could also sear and slide if they are thicker than an inch, searing both sides before sliding them.
